GINISANG MONGGO (Sauteed Mung Beans) for FRIDAY

It's Friday again! For sure there are lots of Filipino housewives cooking Ginisang Monggo today. Monggo or Mung Beans in English is one of the famous Filipino Dish to cook especially during Fridays. I don't know exactly the reason behind why it became a tradition to cook Ginisang Monggo or Sauteed Mung Beans during Fridays. Sauteed Mung Beans or Ginisang Monggo is usually serve with fried fish. Here is my own version on how to cook Ginisang Monggo or Sauteed Mung Beans.

Ingredients:
1/4 Monggo or Mung Beans
1/4 Pork Belly
3 pieces Tinapa or Smoked Fish
Ampalaya Leaves
1 piece Red Oinion
3 gloves Garlic
Vetsin 
Salt
2 tbsp Cooking Oil

How to Cook:
1. Soak the Mung Beans or Monggo at least one hour before cooking, this will help the Mung Beans or Monggo to get tender easily while cooking

2. Boil the soaked Mung Beans or Monggo in a casserole with 2 cups of water, cover the casserole

3. Wait till the Mung Beans or Monggo gets tender, TIP: while boiling, press the Mung Beans or Monggo with ladle. This will help the Mung Beans or Monggo to cook easily

4.  Set aside the boiled Mung Beans or Monggo once cooked

5. On a separate casserole, pour and heat the cooking oil

6. Saute onion then add garlic, wait till the garlic turned golden brown

7. Add the Pork Belly, cook until tender

8. Once the pork is tender, add the smoked fish or tinapa and cook up to 5 minutes

9. Now, add the boiled Mung Beans or Monggo and cook for another 5 minutes

10. Then add the Ampalaya Leaves, cook for 5 mimutes

11. Add salt and vetsin to taste

Makes 4 servings. Best serve when hot.
